Ingredients for samosa outer cover
1 cup Maida(300 gms Refined Flour)
2 tbsp Oil
1/2 tsp Carrom Seeds
1/2 tsp Black Cumin Seeds
1/4 tsp Salt
Ingredients for stuffing (potato stuffing)
4 medium boiled Potatoes
1/2 cup frozen Green Peas
1 tsp roughly crushed Corriander Seeds
1/2 tsp Red Chili Powder (kashmiri lal mirch)
1/2 tsp Dry Mango Powder(Amchur Powder)
1/2 tsp Turmeric Powder(haldi)
1 tsp Carrom Seeds
1 tbsp. Kasoori Methi
1 Bunch of Fresh Coriander leaves(taza dhaniya patti)
1 tsp Salt
2 chopped green Chilies
2 tsp chopped Ginger
1 tsp Black Cumin Seeds
1 tsp Cumin Seeds
1 tsp Fennel Seeds
1 tbsp. Oil
1 tsp Asafoetida(Hing)
Follow below method to make spicy Punjabi style samosa at home:
1. First prepare the dough by mixing the ingredients for the outer cover. Knead the dough with water, the dough should be harder than the usual.
2. Cover the dough and rest it for half-hour.
3. For potato stuffing, heat the oil in non stick pan.
4. Add all the spices in hot oil (Keep aside Kasuri methi, Mango Powder, coriander leaves, and potatoes)
5. Stir for 1-2 minutes till the aroma comes. Then add small pieces of boiled potatoes.
6. Sauté the mixture for 4-5 minutes on low flame.
7. Add Kasuri methi and remove the non stick pan from flame.
8. Let it cool down properly then add Amchur Powder in the mixture.
9. Now, knead the dough again for 4-5 minutes then make small bolls from the dough.
10. Roll it with the rolling pin in circle shape.
11. Cut it into 2 semicircle then add a spoonful of potato mixture in the center of the half-circle.
12. Apply some water on the edges of the sheet with the help of fingers and fold them like a samosa.
13. Heat the oil in the frying pot, fry the Samosas on medium to low flame until cooked golden brown and crispy.
14. Serve hot with Ketchup or mint chutney. Enjoy!!!!
NOTE: The recipe can be replaced with boiled noodles to make Chinese Samosa.
